Dairy Free Eggnog Cookies

It took us until Christmas Eve to make a second batch of Christmas cookies, and these were actually successful. I usually bake cookies for loved ones as gifts since we don’t have a huge budget. This year just felt so chaotic, so please know that I still love you even though I didn’t get to gift you a tub of cookies.

I wanted to share a recipe that we really, REALLY love. I adapted this recipe from Land O’Lakes Eggnog Snowflake Cookies. Having a child with food allergies forces you to look for substitutes and make things work to keep your child safe.

Dairy Free Eggnog Cookies

1 cup Earth Balance Vegan Butter
1 cup sugar
1 egg
2 Tablespoons Silk Nog
1 tsp Rum Extract Β  Β *I didn’t have this, and they still turned out delicious
1 tsp vanilla extract
2 1/2 cups AP flour
1 tsp baking powder
1/2 tsp salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Combine vegan butter and sugar in a large bowl and beat on medium until creamed. Add egg, silk nog, and Rum & vanilla extracts; continue beating until mixed. Reduce speed to low and add all remaining ingredients. Beat until mixed well.

Lay out two pieces of plastic wrap and divide dough into two balls. (Put flour all over the plastic wrap, or it will be a sticky mess.) Wrap and flatten each ball. Refrigerate for 2-3 hours, or overnight.

Preheat oven to 375 degrees. Roll out one-half of dough to 1/4 inch thickness. Cut with cookie cutters and place on your baking sheet. These cookies don’t expand, so you don’t need a ton of space in between. Bake for 7 minutes, then let cool on a wire rack.

Glaze:

1/2 cup powdered sugar
2 teaspoons Earth Balance Vegan Butter
2 teaspoons lite corn syrup
1/4 teaspoon rum extract
3-5 Tablespoons water

Combine all ingredients except water in a bowl. Beat at medium speed adding water until your desired consistency is reached.
Decorate to your heart’s content. πŸ™‚

These cookies are so lite and delicious!! Like I said, I am out of rum extract, so I omitted that ingredient, and they still taste delicious. If you are not a fan of the texture of eggnog, these cookies are a perfect way to get that tasty holiday flavor.
